Most vanilla chais use vanilla flavoring, which tastes like cake batter. We use split bourbon-vanilla beans from Madagascar — more expensive, slower-blooming, and tastes like the inside of a vanilla pod, which is the point.

Cracked vanilla beans, Assam-Ceylon blend, lighter spice load than masala — cinnamon and cardamom only, no clove or pepper. Brew with milk and you get something close to chai latte without the sugar. Or brew straight on water, no sweetener, and the vanilla reads as a perfume on top of the malt.
